How Sajang's arabica coffee grows slowly in volcanic soil, and what makes its taste different.
On the slopes of Mount Rinjani, at around 900 metres, arabica coffee grows without hurry. Cool air and fertile volcanic soil let the beans ripen slowly, giving the sugars and acids time to come together.
Sajang's farmers pick selectively, only the cherries that are truly red. This patient process yields a cup with bright acidity and a distinctive floral aroma.
